Happy New Year!

I hope this year brings you beautiful times
of joy, peace, and relationship
with those you love deeply,
as well as with He who loves you most. . .

This is one of the easiest recipes I have, and yet,
I don't make it often.

Baking Buddy's Uncle, (my big brother), loves this dessert.
He's one of those irritating people who can eat it without
even worrying about whether it's attaching itself
to his hips, or thighs, or pinkie toes.

Yes, folks, even my toes gain weight!
But I digress. . .

Here, for your chocolate-loving pleasure is:

CHOCOLATE MOUSSE




In small heavy saucepan, 
bring to a simmer:
1/2 cup heavy cream


Remove from heat and add:
3 ounces bittersweet chocolate
3 ounces semi-sweet chocolate



Cover and let stand for about 5 minutes:




After the 5 minutes is up,
stir together warm cream and
chocolate pieces until smooth.






In another bowl, with an electric mixer,
Beat until soft peaks form:
1 1/2 cups heavy cream
1/4 cup confectioners' sugar
1 tsp vanilla


Fold:
1/3 of whipped cream mixture into melted chocolate
(this lightens the chocolate and keeps the thick chocolate mixture
from "breaking" the whipped cream when incorporated together)



Pour:
lightened chocolate / cream mixture
into remaining whipped cream.
Fold together gently.





Pipe:
(or spoon)
into individual cups for serving.


This is delicious with a little dollop of whipped cream
if you have some on hand!
(is there anything, really, that isn't made a little better
with a dollop of home made whipped cream?!)
