Ooey Gooey Pumpkin Cake

Today, my friends, we start our 
"Pumpkin Week"
with a recipe adapted from Paula Deen
by my Baking Buddy.

She calls it
"Ooey Gooey Pumpkin Cake"
with cinnamon whipping cream.
It is delicious!

 

Mix together:
1 package yellow cake mix
1 stick of melted butter
1 egg

Press into 9x13 baking dish
sprayed with cooking spray.



To make the filling
Mix:
8oz. package of softened cream cheese
15oz. can of packed pumpkin


Add:
3 eggs
1 tsp. vanilla
1 stick of melted butter
Beat until smooth. 

Add:
1 box of confectioners' sugar
(do this in three additions and pulse the mixer 
so you don't wind up wearing it)


Add Spices:
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp pumpkin pie spice
Mix until smooth.
Pour the mixture over your cake mix crust.


Bake:
320 degrees (convection)
350 degrees (conventional)
45-50 minutes
(until just the middle jiggles slightly)


Let it cool on a wire rack to room temperature.

Serve with a dollop of fresh whipped cream
(we like to add a little cinnamon to ours)
