Best Bar Cookie Ever!

We survived our week of "Christmas Musical" crazies.
It is one of the most stresssssssful and
busiest weeks in the life of my family
They are so very good to me.
Gracious, patient, helpful, careful.

To be on the other side of it brings emotion of relief and sadness.
I'm so grateful it's over and so amazed
at the talent within our church family.
A tiny bit sad that after 3 months of endless
rehearsing and concentration;
it's over.

However, that means we can turn our attention back to the kitchen!

My family and I had a fun party to attend,
and Baking Buddy wanted to take this dessert.
I have been making this for years,
and typically only make it around the holidays.

I found out today that it is one of Baking Buddy's favorite things
(who knew!?), and she tried her hand at it this morning.
She hit a home run. It's perfect!

I must say, I'm still waiting to find something that
Baking Buddy doesn't do as well, if not better than me.
My guess is, she will surpass here mama in everything.
She's fabulous.

So...here is the recipe for one of the most delicious
bar cookies you'll ever eat!

YUMMY!

In a medium pot combine:
1 cup granulated sugar
1 cup light corn syrup
1 tsp salt

Melt together on medium heat, stirring regularly
until the sugar and salt are completely dissolved.

Add:
2 cups smooth peanut butter
(as the peanut butter begins to melt remove
the mixture from the heat)

Stir in:
4 cups of rice cereal
really mix it in there- use those muscles!

Pour
into a greased 9x13 dish and spread evenly

Let that delicious-ness cool and get busy with the icing!

In a small saucepan melt:
12 tablespoons butter (1 1/2 sticks)
3/4 cup packed brown sugar

When thoroughly melted remove mixture from the heat.

Add to the butter-brown sugar mixture:
3 tablespoons milk
1 1/2 teaspoons vanilla

Stir.

Pour liquid from the saucepan into a mixer and

Mix-in:
3 3/4 cups powdered sugar
until the icing is smooth.

Spread the icing over your peanut butter layer
and you are ready to enjoy this tasty treat.
That's right- there's no wait time!

With a glass of milk nearby
cut yourself a nice piece...
don't forget to share!

you are loved
