Banana Muffins

This is one of those
"either you like it or you don't"
recipes.

If you like bananas, you'll love these cupcake/muffins.


Preheat oven to:
350 degrees (conventional oven)
or
320 degrees (convection oven)

Line:
muffin pan with cupcake liners.
(this recipe nets approximately 15 cupcakes)

Combine in medium bowl and set aside:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt


Mix together:
1 1/2 sticks butter (3/4 cup)
3/4 cup sugar


Add:
1/4 cup sour cream
1 1/2 teaspoons vanilla


Beat in 1 at a time:
2 large eggs


Incorporate:
flour mixture into wet mixture until combined


Fold in gently:
3 ripe/smashed bananas
1/2 cup chopped walnuts
(you can easily leave out the walnuts if you like)




Fill:
each cupcake liner about 3/4 full.
Sprinkle a little tidbit of sugar on top of each muffin.

Bake for about 20 minutes
(or until toothpick inserted comes out clean)


Let cupcakes cool on wire rack.
(or grab one of those DELICIOUS banana treats
and eat it warm.) 

Yum!  Banana-fana heaven!


By the way, the only difference between a 
cupcake and a muffin is the icing!
If you are so inclined, top these with some delicious
cream cheese frosting and watch that muffin
turn to a delicious cupcake!
