Red Velvet Cake

Happy Friday my friends!
I am sorry it's been such a long time between posts.

Generous Kitchen has been closed for many days 
due to some ugly flu bug floating around
making us all quite ill.

However, yesterday we finally had a chance to 
bake something WONDERFUL!

It's one of Baking Buddy's best recipes.
Red Velvet Cake with Cream Cheese Frosting


YUM!

Dry ingredients first:
In large bowl, combine:
2 1/2 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 1/2 tablespoons cocoa powder
Mix together with a fork until combined and set aside.


Now for the wet ingredients:
Mix together in electric mixer:
1 cup plus 2 tablespoons vegetable oil
1 cup buttermilk
2 eggs
2 1/2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla
Mix together on low speed 
(otherwise you'll be wearing it, friends!)


Add dry ingredients to wet ingredients
in approximately 1 cup portions and mix slowly.


Grease two 9 inch cake pans and fill 2/3 full
with the beautiful red batter!

Bake:
320 degrees convection 
350 degrees conventional 
for 30 minutes


Let cool and then assemble.
Ice with our DELICIOUS
Cream Cheese Frosting
(again, YUM!)

Mix:
2 blocks (eight oz each) softened cream cheese
2 sticks softened butter
1 teaspoon vanilla
Add slowly:
4 cups powdered sugar

It's important that the cream cheese and butter be 
nice and soft at room temperature to avoid lumpy frosting!


Spread on your beautiful cake and enjoy!

We happened to be taking this cake to some sweet friends'
house for a fundraiser dinner, raising money for their
young boy's football league.
