Chocolate Crinkle Cookies

Just so you're not thrown into complete shock
by our last post, here are some
delicious, chewy, chocolate-y cookies.

These come from the Betty Crocker Cooky Book
and simply can't be beat when you're in the mood
for something sweet!

In a mixer combine:
1/2 cup vegetable oil
4 squares (4oz.) of melted, unsweetened chocolate
(follow directions on the box to melt chocolate)
2 cups granulated sugar
Mix well.

Add:
2 teaspoons vanilla
4 eggs (add eggs one at a time)

In a separate bowl, sift:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup powdered sugar

Gradually add dry ingredients to wet and mix carefully.

Refrigerate this thick dough for an hour
so that it is easier to roll.
When chilled, scoop (don't roll) dough and drop in a bowl
of powdered sugar and coat generously.
After it's coated then roll it into a ball
and place on a cookie sheet.

Bake
320 convection or 350 conventional
for 10 minutes
Don't over-bake these little gems or you'll miss out
on their chewy goodness.

If you have the willpower to eat just one of these
you're my hero, but for all you mere mortals out there-
enjoy and you're in good company!

Don't forget to share

you are loved.
