Cranberry Oat Bars

Is it really DECEMBER?!
It feels like somebody stole November and we
jumped straight from October to December.

Well, sweet friends, 
Generous Kitchen is finally getting something posted.

I woke up this morning thinking these would be a tasty breakfast treat.

Cranberry Oat Bars


In a large bowl
Cream together:
1 cup butter (softened)
1 cup brown sugar


Combine together:
2 cups quick cooking oats
1 1/2 cups flour


Blend oat mixture into butter mixture.


Set aside 1 1/2 cups of this mixture for crumb topping.
Press:
remaining oat/butter mixture into an ungreased 13x9 inch pan.


Bake:
330 degrees(Convection Oven)
350 degrees (Conventional Oven)
for 10-12 minutes.

While that bakes, in a large bowl,
Combine:
2 cups dried cranberries
1 cup sour cream
3/4 cup sugar
1 egg
1 tablespoon orange zest
1 teaspoon vanilla


Pour:
over baked crust and spread evenly.


(on a little side note here, we think that if you love nuts,
maybe 1 cup cranberries [instead of 2 cups] and 
1 cup walnuts or pecans would be fantastic!
Just sayin . . .something to ponder.)

Sprinkle/Crumble:
the crumb mixture on top you had set aside.


Bake again:
for 20-25 minutes or until lightly browned.

Cool:
on a wire rack
and refrigerate leftovers.
