Triple Threat Cookies!


Here's a terrific cookie recipe. . .
Just. Because. We. Love. You.

Preheat oven:
320 Convection
or
350 Conventional

Combine in medium bowl:
2 1/3 cups all-purpose flour
3/4 cup good cocoa
1 tsp baking soda
1 tsp salt

Cream together:
3 sticks (1 1/2 cups) room temperature butter
1 cup granulated sugar
1 cup firmly packed brown sugar

Add:
1 egg
1 teaspoon vanilla
(Batter will be very dense and thick)

Mix in the "Triple Threat":
3/4 cup white chocolate chips
1 1/2 cups semisweet chocolate chips
1/2 cup bittersweet chocolate chips

(You can do anything that suites your taste.
If you want more or less of any chocolate, feel free, but try to end up with approximately 2 3/4 cups of chocolate in the dough.)

Add:
1 cup chopped almonds
The nuts are optional, but highly suggested!
(we used a food processor because we wanted them in very small pieces)

Bake for 12 minutes:
2 inches apart on sheet pans lined with parchment or silpat

Do not over bake.
Take out of the oven while still soft and smooshy.
(yes...you heard me correctly. "smooshy")

Pour yourself a cold cup of milk, or a wonderful cup of coffee and enjoy the awesomeness that is this cookie . . .
