Banana Bread Love


My Baking Buddy is part of a "little club of women" called
Ko Jo Kai

She found this club while attending her University in Texas.
They are the oldest social club (sorority) on campus,
and Baking Buddy LOVES this "little club of women" known as KOJIES!

A "sister" brought banana bread to one of their many events.
Baking Buddy loved it and asked for the recipe.
Her "sister" invited Baking Buddy over to bake together
while watching a Dallas Cowboy's football game.
(They do love them some Cowboy football!)

Following is the recipe almost exactly like Baking Buddy received it,
with just a few variations!

Cream together:
1 1/2 cups sugar
1/2 cup shortening
2 eggs

In separate bowl combine:
2 cups flour
1 tsp baking soda
1 tsp salt

Gradually add dry ingredients to creamed mixture.

Peel and smash on a plate:
3-4 very ripe, large bananas
(alter the # of banana according to your desired "banana-y" taste)

Sprinkle:
1 tsp cinnamon over smashed banana mixture

Add smashed bananas to batter and mix.
(Do not over mix)

Pour batter into prepared pans.
We used Wilton Petite Loaf pans with paper liners.
It makes great little "gift" loaves!


Bake:
Convection Oven 305 degrees for approximately 25 minutes.
Conventional Oven 325 degrees

These can also be baked in a larger single loaf or bundt pan.
Bake that at same degree but for 40 - 50 minutes.
Do not over bake.
You just want to make sure the middle isn't "jiggly".
(But really, who doesn't want to make sure their middle isn't "jiggly"!)
