Strawberry Cake

When Baking Buddy was attending her 
University in Texas, 
it was not possible to fly home every time 
there was a day off or holiday.

Because of this, she found many hospitable folks 
happy, willing, and loving enough 
to take a California girl
in their home for a weekend now and then.

Easter, 2008, she went to the home of a friend in
Bedford (Fort Worth area), Texas.
The mom had been a caterer and had a reputation for
being not only a great cook, 
but a terrific baker, as well.

From this weekend, aside from the love and attention Baking Buddy received,
she also left with this recipe for delicious 
Strawberry Cake.

for caring for my girl, (Baking Buddy) when she couldn't come home to me!


Preheat oven:
320 degrees Convection Oven
or
350 degrees Conventional Oven

Mix together:
1 box white cake mix
3/4 cup oil
4 eggs


Puree in Blender until smooth:
one container (20-24 oz) 
sliced frozen strawberries in syrup


Mix in:
1/2 the pureed strawberries into cake batter 
(about 1 1/2 cups)


In small measuring cup heat until steaming 
(but not quite boiling):
1 1/2 cups water
Stir in:
1 small package Strawberry Jell-O


Add:
Jell-O mixture to cake mix
This turns the cake a very pretty pink color!
(we love pink)
Pour batter in a 9 x 13 baking dish sprayed with 
cooking spray (just to be safe!)


Bake:
30-35 minutes
(until a knife comes out clean)


Mix together:
1 box confectioners sugar
1 stick softened butter
More of your blended strawberry puree to taste
(Make sure you leave a little 
strawberry puree to use as garnish)

Spread/Pour
over cake that has completely cooled


Cut and serve:
 with a dollop of fresh whipped cream and a 
drizzle of the strawberry puree.
